A glass full of sweet sin. The brownies with coconut strawberry ice cream are so good and easy to make, you will definitely eat them with a clear conscience!
My other Recipe Brownies with avocado prepared, but this one I find almost better. I really like brownies with nuts, but unfortunately I did not have any more home, so I just made coconut strawberry ice cream. Great replacement gel? Haha!
- 1 tbsp flour
- 1 Apple cider vinegar
- 1 tbsp baking powder
- 200 g vegan butter / margarine
- 200 g vegan chocolate (melted)
- 50 g Sugar (eg birch sugar)
- 100 g frozen strawberries
- 50 g coconut yoghurt
- 1 EL sugar (eg birch sugar)
Put all ingredients in the blender until a creamy consistency is obtained. Then fill in a suitable mold and place in the freezer for at least 1 hour.
First grease a brownie form or use some baking paper. Now mix all ingredients except the chocolate in a large bowl with a hand mixer. Meanwhile, melt the chocolate and add afterwards to the mass.
Once everything is well mixed put it in the baking pan and bake for about 20 minutes at 190 degrees.
The recipe is really easy but you have probably already noticed. The brownies do not need so much time only the ice cream has to stay for a while in the freezer.
Incidentally, I always take birch sugar because it has fewer calories, but works just as well with normal or brown sugar.
